The definition for single malt whisky according to SAWIS is:

Malt whisky shall –

(a) be produced from a mash of malt-

(i) in which the diastase contained therein, with or without other natural enzymes, has brought about sugar conversion;

(ii) which has been fermented by the activity of yeast; and

(iii) which has been distilled in a pot-still so that the distillate has a flavour and taste originating from the raw material used;

(b) be matured for at least three years in wooden casks with a capacity of not more than 700 litres; and

(c) have an alcohol content of at least 43 percent.

 

All our whiskies are handcrafted, small batch, single malt, single cask whisky and only 2 x 225L casks per day are produced. The whisky in the cask is sold as a pre-release whisky but produce within the bottle will also be available .

We also offer smaller sized casks of 50L and 100L along with the 225L casks (the sizes of casks vary and are not an absolute).

Cape Distillery produces a Full-Peated and Non-Peated Classic Malt whiskies as well as Medium Peated Malt Whisky with a minimum order of 2 250L due to production requirements.
